  • 1/2 cup water
  • 1/2 cup whole milk
  • 8 Tbsp unsalted butter
  • 1 tsp granulated sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs (room temperature)
  • 2 cups heavy whipping cream (chilled)
  • 4 Tbsp granulated sugar (for filling)
  • 1 tsp vanilla extract
  • Fresh raspberries (optional)
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, sugar, and salt; bring to a boil.
  3. Remove from heat and mix in flour until dough forms.
  4. Cook the dough on medium heat until it releases moisture.
  5. Allow to cool slightly before mixing in eggs one at a time until smooth.
  6. Pipe out dough into uniform puffs on the baking sheet.
  7. Bake for 10 minutes at 425°F, then reduce temperature to 325°F for an additional 20-22 minutes until golden brown.
  8. Prepare the filling by whipping together cream, sugar, and vanilla until stiff peaks form.
  9. Fill cooled puffs with whipped cream and add raspberries if desired.
