  • 8 oz linguine pasta
  • 2 boneless skinless chicken breasts
  • 2 tsp olive oil
  • 1 1/2 to 2 Tbsp Cajun seasoning (divided)
  • 2 Tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2/3 cup diced tomatoes
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • 2 Tbsp fresh parsley, finely chopped (for garnish)

Instructions

  1. Cook the linguine according to package instructions until al dente, reserving 1/2 cup pasta water before draining.
  2. Season chicken breasts with Cajun seasoning. In a large non-reactive skillet, heat olive oil over medium-high heat and cook chicken until fully cooked (165°F). Slice and keep warm.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add diced tomatoes and cook for another two minutes.
  4. Pour in the cream and add remaining Cajun seasoning and Parmesan cheese; bring to a simmer.
  5. Mix in sliced chicken and cooked pasta, tossing until well combined. Adjust sauce consistency with reserved pasta water if needed.
  6. Serve garnished with parsley.
