  • 8 oz penne pasta
  • 1 ½ lbs boneless skinless chicken breast
  • 4 teaspoons Cajun seasoning
  • 1 ½ cups heavy cream
  • 2 bell peppers
  • ½ yellow onion
  • ¾ teaspoon smoked paprika
  • â…“ cup fresh parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 tablespoons salted butter
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large Ziploc bag, mix 3 teaspoons of Cajun seasoning, salt, and pepper; add chicken and shake to coat evenly.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the seasoned chicken and cook until browned and fully cooked. Remove from the pan.
  4. Add remaining butter, onion, and bell peppers to the skillet; sauté until softened.
  5. Stir in heavy cream, smoked paprika, basil, garlic powder, remaining Cajun seasoning, salt, and pepper; simmer until sauce thickens.
  6. Return chicken to the pan along with cooked pasta and parmesan cheese; mix until cheese melts. Serve warm.
