  • 2 lb. boneless skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 minced garlic clove
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large oven-safe skillet over medium heat and melt the coconut oil and olive oil.
  3. In a mixing bowl, combine flour and cilantro. Coat each chicken breast in the mixture before adding them to the skillet.
  4. Sear each side for about 3-4 minutes until slightly browned; add minced garlic towards the end.
  5. Mix together coconut milk, chicken broth, brown sugar, and the juice of one lime in a bowl.
  6. Pour the sauce over chicken breasts, bake for 10-15 minutes until internal temperature reaches at least 165°F (75°C).
  7. Drizzle with juice from the second lime and garnish with cilantro and green onions before serving.
