  • 2025 jumbo pasta shells
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 12 ounces mushrooms, finely chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups heavy cream
  • 1 cup whole milk
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells in salted boiling water until al dente, then drain.
  3. In a skillet over medium heat, sauté garlic in olive oil and butter until fragrant. Add mushrooms and cook until softened.
  4. In a mixing bowl, combine sautéed mushrooms with ricotta cheese, half of each mozzarella and Parmesan cheeses, herbs, salt, and pepper.
  5. Fill each shell with the mushroom mixture and arrange them in a casserole dish.
  6. Pour cream over the shells and top with remaining cheeses.
  7. Cover with foil and bake for 25 minutes; uncover and bake an additional 10 minutes until golden brown.
