  • 2 lbs chicken, cut into thin strips
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained

Instructions

  1. Season chicken strips with salt and pepper.
  2. Melt butter in a large skillet over medium-high heat and brown the seasoned chicken (5–7 minutes). Remove from skillet.
  3. Sauté onions and garlic until golden (3–4 minutes).
  4. Add chicken stock and roasted red peppers; reduce by half (around 5 minutes).
  5. Turn off heat and stir in heavy cream and Parmesan until smooth.
  6. Return heat to medium; add Italian seasoning and pepperoncini. Stir well.
  7. Combine the chicken with the sauce; simmer until fully cooked (5–7 minutes).
  8. Serve hot over rice or pasta.
