  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cup Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Brew espresso coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice; blend until smooth.
  3. Add pumpkin puree and mix until fully incorporated.
  4. Whip cold heavy cream separately until thickened; fold into the mascarpone mixture.
  5. Quickly dip each ladyfinger in coffee and layer them in a 13 by 9 inch baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers; repeat with another layer of dipped ladyfingers.
  7. Pipe remaining filling on top and refrigerate for at least 4 hours before serving.
