  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 minced shallots
  • 2 cloves minced garlic
  • 3 cups chopped spinach
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 4 ounces softened cream cheese
  • 1 cup freshly grated parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F. Prepare chicken breasts by patting dry and cutting pockets into each.
  2. Heat olive oil in a skillet over medium-high heat. Add shallots; cook for about 3 minutes. Stir in garlic and spinach until wilted.
  3. In a bowl, mix softened cream cheese, parmesan, wilted spinach mixture, half of the spice mix (oregano, thyme, salt, pepper, red pepper flakes).
  4. Rub chicken breasts with olive oil and season with remaining spice mix. Stuff with spinach mixture.
  5. Place chicken in a greased baking dish and bake uncovered for 30–45 minutes until cooked through.
