  • 500g skinless, boneless chicken thighs
  • 30g unsalted butter
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 celery stems, finely sliced (or 2 carrots)
  • 4 cups low-sodium chicken broth
  • 3 cups water
  • 250g small pasta shells
  • 1 cup grated parmesan cheese
  • 1 cup heavy cream
  • 2 cups chopped baby spinach
  • 1/2 cup sun-dried tomato strips

Instructions

  1. Season chicken thighs with salt and pepper. In a large pot over medium-high heat, melt butter. Cook chicken for three minutes on one side until golden, then flip and cook for an additional two minutes. Remove from pot.
  2. Lower heat to medium-low and add garlic, onion, and celery; sauté for three minutes until softened.
  3. Increase heat back to high and deglaze with apple vinegar until reduced by half.
  4. Stir in chicken broth, water, salt, and pepper; bring to a boil. Add pasta shells and cook according to package instructions.
  5. Chop cooked chicken into bite-sized pieces and return it to the pot.
  6. Once pasta is al dente, lower heat; mix in parmesan until melted, then stir in cream and spinach for about one minute.
  7. Serve hot topped with sun-dried tomatoes drizzled with oil.
