  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1 pound ground chicken sausage
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente, reserving 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken sausage and cook until browned, about 5-7 minutes. Remove from skillet.
  3. In the same skillet, sauté garlic until fragrant. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Add heavy cream and simmer for 3-5 minutes.
  4. Mix in Parmesan cheese followed by cooked sausage and spinach until the spinach wilts.
  5. Toss in the cooked penne pasta, adding reserved pasta water as needed for consistency.
  6. Serve hot with torn basil leaves garnish.
