  • 17.5 oz sugar cookie mix
  • ½ cup unsalted butter (melted)
  • 1 large egg
  • 2 tbsp light brown sugar
  • 3.5 oz instant French vanilla pudding mix
  • 16 oz cream cheese (softened)
  • 1 large egg
  • 3 egg yolks
  • ½ cup sour cream
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • ½ cup toffee bits

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the sugar cookie mix, melted butter, brown sugar, egg, and vanilla extract until well blended. Press this mixture into the bottom of the prepared pan.
  3. Bake for about 10 minutes until lightly golden. Allow to cool slightly.
  4. In another bowl, beat the cream cheese until smooth. Mix in the pudding mix, sour cream, granulated sugar, eggs, egg yolks, and vanilla extract until fully combined.
  5. Pour this filling over the cooled crust and sprinkle with toffee bits. Bake for an additional 30-35 minutes until set.
  6. Let cool at room temperature before refrigerating for at least 3 hours before cutting into squares.
