  • 1 cup + 2 tbsp granulated sugar (for pastry cream)
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 cup + 1/4 cup granulated sugar (for cookies and brulee topping)
  • 1 cup unsalted butter, softened
  • 1 egg

Instructions

  1. Prepare the Vanilla Pastry Cream: Heat milk in a saucepan until steaming. In a bowl, whisk egg yolks, sugar, salt, vanilla bean paste, and cornstarch until pale yellow. Gradually mix hot milk into this mixture, return to heat, and whisk continuously until thickened. Stir in butter and chill.
  2. Make the Sugar Cookies: Preheat oven to 350°F. Combine flour, baking powder, and salt in one bowl; cream butter and sugar in another bowl until fluffy. Mix in egg and vanilla, then combine wet and dry ingredients. Roll dough into balls coated in sugar.
  3. Bake: Place on parchment-lined sheets and flatten slightly before baking for about 9–10 minutes. Cool completely.
  4. Assemble Cookies: Pipe chilled pastry cream onto each cookie, sprinkle with sugar, and use a kitchen torch to caramelize until golden brown.
