  • 2 cans Great Northern Beans (drained and rinsed)
  • 1 can green chilies
  • 1 cup canned sweet corn
  • 2 teaspoons ground cumin
  • 1½ teaspoons salt (or to taste)
  • ¾ teaspoon freshly ground black pepper (or to taste)
  • ¾ teaspoon chili powder (or to taste)
  • ½ teaspoon smoked paprika (or to taste)
  • lime wedges (for serving)
  • 1 avocado (sliced or diced, for garnish)
  • jalapeno slices (for garnish, optional)
  • sour cream (for garnish, optional)
  • chopped fresh cilantro (for garnish)

Instructions

  1. Place chicken at the bottom of your slow cooker. Add chicken broth, onion, garlic, beans, green chilies, and corn. Stir in spices.
  2. Cover and cook on HIGH for 3.5 to 4 hours or LOW for 5 to 6 hours until chicken is fully cooked.
  3. Remove chicken; shred with forks once cooled. Blend about 1 cup of the soup until smooth and return it to the pot.
  4. Stir shredded chicken back into the soup and adjust seasoning as needed.
  5. Serve warm with garnishes like lime wedges, avocado slices, jalapeño slices, sour cream, and cilantro.
