  • Kosher salt

  • 2 (1-ounce) packets dry onion soup mix
  • 2 cups water
  • 2 (14.5-ounce) cans beef broth (or Better-than-Bouillon)
  • 68 slices Swiss or provolone cheese
  • 68 crusty rolls (ciabatta or hoagie)

Instructions

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season beef with kosher salt and black pepper. Sear until browned on all sides (about 1–2 minutes per side).
  2. Prepare for Slow Cooking: Transfer seared beef along with pan drippings to the slow cooker. Sprinkle dry onion soup mix over the meat and pour in water and broth.
  3. Slow Cook: Cover and cook on HIGH for 4–6 hours or LOW for 8–10 hours until tender.
  4. Shred and Assemble: Remove beef from the slow cooker, shred with forks, and pile onto sliced rolls. Top with cheese.
  5. Toast and Serve: Broil assembled sandwiches until cheese is melted and rolls are toasted. Serve hot with au jus for dipping.
