  • 1 cup mayonnaise
  • 2 cups chopped dill pickles
  • 8 oz Colby Jack cheese (cubed)
  • 1 small white onion (finely chopped)
  • 1/3 cup dill pickle juice (from the pickle jar)

Instructions

  1. Cook the rotini pasta according to package directions. Add salt to boiling water before cooking.
  2. Drain and rinse the pasta with cold water. Transfer it to a mixing bowl and add 1/3 cup of dill pickle juice; mix well.
  3. Chop the dill pickles, cheese, and onion into small pieces.
  4. Combine the drained pasta with pickles, cheese, and onion in the mixing bowl.
  5. In another bowl, whisk together mayonnaise, sour cream, additional pickle juice, chopped dill, salt, and pepper.
  6. Pour the dressing over the pasta mixture and stir until well coated.
