  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 1 teaspoon dried oregano

  • 1/4 teaspoon black pepper
  • 1/2 red onion, thinly sliced
  • 1 cup crumbled feta cheese (or plant-based alternative)
  • 1/4 cup chopped fresh parsley
