  • 1/4 cup unsalted butter, divided
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 large egg yolks

Instructions

  1. Peel and chop the potatoes; boil in salted water until fork-tender (15-20 minutes).
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
