  • 2 cups cooked chicken, shredded or diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup grape tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1 cup Greek-style tzatziki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly in the prepared dish and pour chicken broth over it.
  3. Layer shredded chicken on top of the rice, followed by cucumber, red onion, grape tomatoes, and olives.
  4. In a mixing bowl, combine tzatziki sauce with garlic powder, oregano, salt, and pepper. Mix well.
  5. Pour the tzatziki mixture over the layered ingredients and top with crumbled feta cheese.
  6. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake an additional 10 minutes until golden.
  7. Let cool briefly before garnishing with fresh parsley and serving.
