  • 1 ½ cups chicken broth
  • 1 cup plain Greek yogurt
  • 1/3 cup grated cucumber

  • 2 garlic cloves, minced
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley or cilantro (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In the baking dish, mix uncooked rice, chicken broth, olive oil, garlic, dill, oregano, cumin, salt, and pepper.
  3. Arrange the chicken pieces evenly over the rice mixture.
  4. In a small bowl, whisk together Greek yogurt, grated cucumber, and lemon juice; pour over the chicken.
  5. Cover with foil and bake for 35-40 minutes until the chicken reaches 165°F (74°C).
