  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup thick teriyaki sauce
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 3 cups broccoli florets
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  1. Place chicken in the slow cooker, pour teriyaki sauce over it, and add minced garlic and grated ginger if desired.
  2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  3. Remove chicken, shred it using two forks, and set aside.
  4. In a small bowl, mix cornstarch with cold water until smooth and stir it into the sauce in the slow cooker to thicken.
  5. Return shredded chicken to the pot, add broccoli florets, cover, and cook on HIGH for an additional 20-30 minutes until the broccoli is tender-crisp.
