  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder (optional)

  • 1 tablespoon olive oil
  • 10 corn tortillas
  • 2.5 cups shredded Monterey Jack or Mexican cheese

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. In a large bowl, combine shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder (if using), and salsa. Mix well.
  3. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
  4. Brush one side of each tortilla with olive oil and place on a baking sheet, oiled side down. Add cheese and chicken mixture; fold over.
  5. Bake for about 16 minutes, flipping halfway through until golden brown.
  6. Let rest for 3 minutes before serving.
