  • 6 eggs
  • ¼ cup milk (any kind)
  • ½ green pepper (diced)
  • ¾ cup shredded cheddar cheese (divided)
  • 6 medium soft tortilla shells
  • Salt and pepper (to taste)
  • 4 tablespoons unsalted butter (divided)

Instructions

  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the diced green pepper.
  2. In a non-stick skillet over medium heat, melt 2 tablespoons of butter. Pour in the egg mixture and cook while stirring frequently until set but still fluffy. Transfer cooked eggs to a plate.
  3. Wipe out the skillet if necessary and melt the remaining butter over medium heat. Place one tortilla in the skillet.
  4. Sprinkle ¼ cup of cheddar cheese on the tortilla, followed by a layer of scrambled eggs and another sprinkle of cheese. Top with a second tortilla.
  5. Cook each side for about 2-3 minutes until golden brown and crispy. Repeat with remaining tortillas.
