  • 1 tablespoon toasted sesame oil
  • 4 garlic cloves, minced
  • 2 tablespoons fresh ginger, minced
  • 6 cups chicken stock
  • 3 tablespoons low sodium soy sauce
  • 4 green onions, sliced
  • 2 large carrots, julienned
  • 1 (1½ pound) bag frozen dumplings (potstickers)
  • 3 cups fresh spinach
  • Sea salt to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat. Sauté minced garlic and ginger until fragrant (about 3 minutes).
  2. Add chicken stock, soy sauce, green onions, and carrots; bring to a boil over high heat. Reduce heat to medium-low and cook for about 5 minutes until carrots are tender.
  3. Stir in frozen dumplings and return to a boil for about 4 minutes until cooked through.
  4. Remove from heat and fold in fresh spinach until wilted. Season with sea salt to taste.
  5. Serve hot, garnished with extra green onions and sesame seeds if desired.
