  • 1 ½2 cups orzo (uncooked)
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • 1/2 red onion, small diced
  • 6 oz. feta cheese, crumbled
  • 23 garlic cloves, minced
  • 1/4 c fresh parsley, chopped
  • ¼ c fresh basil, chopped
  • Juice and zest of 1 lemon (1.5-2 oz juice)
  • 1/2 cup extra virgin olive oil
  • 1 Tbsp honey
  • 1/2 tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Cook orzo according to package instructions until al dente.
  2. Drain the orzo using a colander and rinse with cold water to cool. Drain again.
  3. In a large mixing bowl, combine the cooled orzo with chopped bell pepper, cucumber, onion, garlic, parsley, and basil.
  4. In a separate bowl, whisk together lemon juice, zest, olive oil, honey, salt, and pepper; pour over the salad ingredients.
  5. Toss gently to mix; fold in crumbled feta cheese.
  6. Cover and chill before serving; toss again before serving if desired.
