  • 8 medium waxy potatoes (about 1 kg), peeled and diced
  • 2 shallots, peeled and halved
  • 5 heads garlic, tops cut off
  • Olive oil for drizzling
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 cups (750ml) chicken or vegetable broth
  • 1 cup (250ml) heavy cream
  • Crispy turkey strips, crumbled for garnish
  • Grated mild cheddar cheese for topping
  • Chopped parsley or dill for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet lined with parchment paper, combine diced potatoes, halved shallots, and garlic heads. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary.
  3. Roast in the oven for 30 minutes. Then cover with foil and roast for an additional 15–25 minutes until the potatoes are tender and the garlic is soft.
  4. Transfer roasted vegetables into a large pot; squeeze garlic cloves from their skins. Add broth and heavy cream.
  5. Blend the mixture using a hand blender until smooth; adjust seasoning if necessary.
  6. Warm on medium heat before serving in bowls.
  7. Garnish with olive oil drizzle, crumbled turkey strips, cheddar cheese, and chopped herbs.
