  • 3 tablespoons olive oil
  • 1 large onion (cut into 8 pieces)
  • 12 cloves garlic (halved or quartered)
  • 1 tablespoon kosher salt
  • 1 tablespoon oregano
  • 1 teaspoon smoked paprika
  • 1 cup vegetable broth (or chicken stock)
  • ¼ cup heavy cream
  • ½ cup fresh basil (plus more for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, combine tomatoes, onion, and garlic. Drizzle with olive oil and sprinkle with salt, oregano, and smoked paprika. Toss to coat.
  3. Roast for about 30 minutes until tomatoes are soft and caramelized.
