  • 1 medium yellow onion (chopped)
  • 2 large carrots (chopped)
  • 1 cup chopped celery
  • 28 oz canned diced tomatoes
  • 60 oz vegetable broth (low-sodium)
  • 3 medium potatoes (diced)
  • 1 cup green beans (chopped)
  • 1 cup frozen sweet corn
  • 1 cup frozen sweet peas
  • Salt and pepper to taste
  • Fresh parsley and green onions for garnish

Instructions

  1. Preheat a heavy pot over medium heat and add olive oil.
  2. Sauté the chopped onions and carrots for about 6–8 minutes until golden.
  3. Stir in celery, diced tomatoes (with juice), vegetable broth, potatoes, green beans, bay leaves, salt, and pepper; bring to a boil.
  4. Reduce heat to simmer and cook for about 25 minutes or until vegetables are tender.
  5. Add frozen corn, peas, green onions, and parsley; adjust seasoning if needed. Simmer for another 5–8 minutes before serving.
