  • 5 cups shredded green cabbage
  • 1 cup chopped carrots
  • ½ cup finely diced yellow onion
  • ¼ cup soy sauce
  • ½ cup chicken broth
  • 3 cloves minced garlic
  • Salt and pepper to taste
  • 1 tablespoon peanut oil (can sub avocado or olive oil)
  • 1 tablespoon butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon hot sauce
  • 1 teaspoon mustard powder
  • ½ teaspoon sesame oil (optional)
  • 1/8 teaspoon EACH: ground ginger, white pepper
  • Optional garnishes: toasted sesame seeds, sliced green onions

Instructions

  1. In a bowl, mix soy sauce, chicken broth, garlic, and other seasonings; set aside.
  2. Heat butter in a large skillet over medium-low heat and scramble eggs until cooked through; set aside.
  3. In the same skillet, cook seasoned ground beef with onions until browned. Drain excess grease.
  4. Pour the sauce mixture into the skillet, letting it simmer for about 4 minutes.
  5. Add cabbage and carrots; cook until vegetables are tender but still crisp.
  6. Return scrambled eggs to the skillet and combine everything well before serving.
