  • ⅓ cup extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • ¼ cup maple syrup
  • juice of 1 small lime

Instructions

  1. Preheat oven to 400°F (200°C) and roast cubed butternut squash tossed in olive oil, salt, and pepper for about 30 minutes until tender.
  2. Cook bow-tie pasta in salted water according to package instructions; drain and cool slightly.
  3. Whisk together dressing ingredients until well combined.
  4. In a large bowl, combine roasted squash, cooked pasta, pumpkin seeds, spinach, cranberries, and goat cheese. Drizzle dressing over the top and toss gently.
