  • 1 tablespoon olive oil or avocado oil
  • 1/2 yellow onion, chopped
  • 1 jalapeno, seeded and minced
  • 3 cups shredded chicken
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 4 oz mild green chiles
  • 1 tablespoon fresh lime juice
  • 3 cups shredded cheddar or Mexican blend cheese
  • 12 flour tortillas
  • Shredded lettuce
  • Pico de Gallo
  • Salsa
  • Guacamole
  • Sour Cream
  • Chopped Green Onion
  • Crumbled Queso Fresco

Instructions

  1. Preheat your oven to 425°F (220°C). Set a wire rack on a rimmed baking sheet and spray it with nonstick cooking spray.
  2. In a skillet over medium-high heat, warm the oil and sauté chopped onion and minced jalapeño until soft (about 4 minutes).
  3. In a mixing bowl, combine cooked onion, jalapeño, shredded chicken, cumin, chili powder, salt, garlic powder, paprika, green chiles, lime juice, and cheese until well mixed.
  4. Warm tortillas in the microwave for about 30 seconds until pliable. Spoon about 3 tablespoons of filling onto each tortilla’s bottom third; roll tightly and place seam side down on the wire rack.
  5. Arrange flautas in a single layer on the rack; spray with cooking oil. Bake for 18-23 minutes until golden brown and crisp.
