  • 1/2 cup Creamy Peanut Butter
  • 1/2 cup Unsalted Butter (room temperature)
  • 1/2 cup Granulated Sugar (plus additional for coating)
  • 1/2 cup Light Brown Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 cup Vegan Marshmallows Fluff

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a mixing bowl, beat peanut butter and unsalted butter until combined. Add granulated sugar and brown sugar; mix well.
  4. Incorporate egg and vanilla extract into the butter mixture until fully combined.
  5. Gradually add the dry ingredients to the wet mixture; mix until just combined.
  6. Using a cookie scoop, form balls of dough on the prepared baking sheets and gently flatten them.
  7. Place a dollop of vegan marshmallow fluff in the center of each cookie disc and fold over the dough to enclose the filling.
  8. Roll each ball in granulated sugar before placing it back on the sheet.
  9. Bake for 10-12 minutes or until golden around the edges. Allow cookies to cool before transferring to a wire rack.
