  • 1 tablespoon dry sage
  • 1 egg yolk
  • 64 oz chicken stock
  • 1 tablespoon Dijon mustard
  • 2/3 cup olive oil
  • pinch of salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Place the whole garlic head in a roasting pan and roast for 30-40 minutes until soft and fragrant.
  3. Meanwhile, bring the chicken stock to a gentle boil in a large pot.
  4. Once roasted, let the garlic cool slightly, then squeeze out the cloves into a mixing bowl and mash into a smooth paste using a potato masher.
  5. In another bowl, whisk together the egg yolk, Dijon mustard, and olive oil until creamy.
  6. Add the mashed garlic to the boiling chicken stock and stir well to combine. Gradually mix in the egg yolk mixture while stirring continuously.
  7. Serve hot and garnish with fresh herbs if desired, alongside toasted baguette slices.
