Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Lay a tortilla flat and layer with two slices of provolone cheese, approximately three ounces of roast beef, and a handful of French fried onions. Brush the edge of the tortilla with olive oil.
Roll the tortilla tightly from the filled end and seal the edge. Repeat with remaining tortillas.
Brush the tops and sides of each roll with additional olive oil and bake for 8–10 minutes until golden brown.
