  • 1 store-bought angel food cake, cubed
  • 3/4 cup agave syrup
  • 1 lime (for juice and zest)
  • Oil for frying
  • Powdered sugar (for dusting)
  • 1 cup powdered sugar (for dipping sauce)
  • 1 tablespoon lime juice
  • 3 tablespoons milk

Instructions

  1. Prepare the oil: Fill a heavy stock pot with vegetable oil until about 1/3 full. Heat over medium-high heat until hot but not smoking.
  2. Dip the cake: Cut the angel food cake into large chunks. In a shallow bowl, combine agave syrup and the juice from one lime. Quickly dip each cake piece in this mixture.
  3. Fry the cake pieces: Carefully lower dipped cake pieces into hot oil and fry for about 1 minute on each side until golden brown. Use a slotted spoon to remove them and drain on a paper towel-lined baking sheet.
  4. Dust with sugar: Allow fried shots to cool slightly before dusting with powdered sugar and sprinkling lime zest on top.
  5. Make the dipping sauce: Whisk together powdered sugar, lime juice, and milk until smooth.
