  • 4 teaspoons garlic powder
  • ½ teaspoon salt (more or less to taste)
  • 1 teaspoon avocado oil (or melted refined coconut oil)
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 2 teaspoons pure maple syrup (or 1 tablespoon coconut aminos if on Whole30)
  • 1 tablespoon dill pickle relish
  • 2 teaspoons dried minced onion
  • 1 pinch crushed red pepper flakes (more or less to taste)
  • 2 medium avocados (pit removed, peeled)
  • ½ tablespoon fresh lemon juice
  • 1 cup thinly sliced red onion
  • 2 small heads romaine lettuce (leaves only, roughly chopped; approximately 89 cups total)
  • 1 ½ cups cherry tomatoes (halved; or grape tomatoes, halved)
  • ½ cup pickle chips (plus more to taste)

Instructions

  1. In a medium mixing bowl, combine the ground beef, garlic powder, and salt. Mix thoroughly using your hands or a wooden spoon until well combined.
  2. Heat a large skillet over medium heat. Add avocado oil once the skillet is warm. Swirl or tilt the pan to coat evenly.
  3. Once the oil is hot, add the seasoned ground beef mixture to the skillet. Cook while stirring frequently until it turns brown and crumbles nicely.
  4. In another medium mixing bowl, mix together mayonnaise, ketchup, maple syrup, dill pickle relish, dried minced onion, crushed red pepper flakes, and salt.
  5. Whisk these ingredients until fully combined. Taste your special sauce and adjust seasoning as necessary before setting aside.
  6. In a small mixing bowl, add avocados along with fresh lemon juice and salt. Use a fork to mash all ingredients together until well blended but still slightly chunky.
  7. Once your beef is cooked through, transfer it to a plate or bowl. Return the skillet to medium heat. Add thinly sliced red onions in batches to ensure even cooking without overcrowding.
  8. Cook onions until they are lightly charred on both sides.
  9. Start by dividing romaine lettuce evenly between serving bowls as your base layer.
  10. Place one portion of cooked ground beef in each bowl's center on top of the lettuce layer.
  11. Surround each portion of beef with equal amounts of cherry tomatoes, pickle chips, sautéed red onions, prepared guacamole, and any other desired toppings.
  12. Drizzle generously with special sauce before serving immediately.
