  • 2 whole garlic bulbs
  • 1/2 cup olive oil
  • 1/2 cup softened vegan butter
  • 1 tbsp tomato paste
  • 3 tbsp grated vegan parmesan
  • Small handful fresh basil
  • 400 g spaghetti
  • Salt and pepper

Instructions

  1. Slow-roast the garlic by placing peeled cloves in a small saucepan with olive oil over low heat for about 20 minutes until soft. Let cool.
  2. In a blender, combine roasted garlic, softened vegan butter, salt, and pepper; blend until smooth. Stir in tomato paste, vegan parmesan, and chopped basil. Refrigerate to firm.
  3. Boil well-salted water in a large pot and cook spaghetti until al dente; reserve pasta cooking water before draining.
  4. In the same pot over low heat, add cooked pasta and chilled garlic butter along with reserved water. Toss until sauce is glossy and coats the noodles.
  5. Serve topped with extra vegan parmesan, fresh basil leaves, and toasted breadcrumbs if desired.
