  • 16 ounces penne pasta
  • 6 tablespoons butter
  • 4 cloves garlic (pressed)
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/3 cup Italian style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil (plus more as needed)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • chopped parsley

Instructions

  1. Cook the penne pasta according to package directions until al dente; drain and set aside.
  2. In a shallow bowl, combine bread crumbs, Parmesan cheese, garlic powder, and salt. Dip each chicken cutlet in olive oil and coat with the breadcrumb mixture.
  3. Heat olive oil in a skillet over medium heat; cook each cutlet until golden brown on both sides and fully cooked through. Remove from skillet.
  4. In the same skillet, melt butter over medium heat; sauté pressed garlic until fragrant. Stir in flour to create a roux; gradually whisk in heavy cream and chicken broth until smooth. Season with salt and pepper.
  5. Add cooked penne to the sauce; toss to coat evenly. Serve topped with crispy Parmesan chicken and garnish with chopped parsley.
