  • 137 grams super fine almond flour
  • 117 grams confectioners' sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 100 grams egg whites (about 3 large)
  • 110 grams super fine white sugar
  • 57 grams white chocolate (melted)
  • 1/2 cup unsalted butter (softened)
  • 1 tablespoon molasses

Instructions

  1. Sift together almond flour, confectioners' sugar, cinnamon, ginger, and cloves in a bowl.
  2. In another bowl, whip egg whites until soft peaks form. Gradually add white sugar until stiff peaks form.
  3. Gently fold the dry ingredients into the whipped egg whites until combined.
  4. Pipe small circles onto baking sheets lined with parchment paper and let rest for 30 minutes.
  5. Preheat oven to 300°F (150°C) and bake macarons for 15-20 minutes until firm.
  6. Prepare the filling by beating softened butter until fluffy, then mix in confectioners' sugar, molasses, and vanilla.
  7. Once shells are cool, pipe filling between two shells to create sandwiches.
