  • 100 grams egg whites (about 3 large egg whites), at room temperature
  • 110 grams super fine white sugar (about 1 cup + 2 teaspoons)
  • 12 teaspoons brown gel food coloring (optional)
  • 57 grams (2 ounces) white chocolate, melted
  • 2 tablespoons gingerbread men sprinkles
  • 1/2 cup (114 grams) unsalted butter, softened
  • 1 3/4 cup (210 grams) confectioners' sugar
  • 1 tablespoon (20 grams) fancy molasses
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, sift together almond flour, confectioners' sugar, cinnamon, ginger, and cloves.
  3. In a separate bowl, beat egg whites until frothy; gradually add white sugar until stiff peaks form.
  4. Gently fold the dry ingredients into whipped egg whites and add brown food coloring if desired.
  5. Pipe small circles onto lined baking sheets and let sit for 30 minutes to form a skin.
  6. Bake for 20 minutes until firm; allow to cool before removing from sheets.
  7. For the filling, cream butter with confectioners' sugar, then mix in melted white chocolate, molasses, and vanilla until smooth.
  8. Pair macaron shells by size and fill them with the buttercream mixture.
