  • 1 lemon (juice and zest)
  • 1 tbsp olive oil
  • 1/4 cup fresh grated plant-based Parmesan (plus extra for topping)
  • 2 tbsp fresh dill, torn
  • Salt & black pepper to taste

Instructions

  1. Slice the radishes thinly and place them in a mixing bowl.
  2. Squeeze juice from half the lemon over the radishes, add a pinch of salt, and massage the mixture for 1–2 minutes to soften the radishes.
  3. Add olive oil, grated plant-based Parmesan, and torn dill to the bowl; toss gently to combine.
  4. Transfer the salad to a serving plate and top with additional lemon zest, extra grated plant-based Parmesan, more dill, and a sprinkle of black pepper.
  5. Serve immediately for the best flavor.
