  • 2 tablespoons lemon juice
  • 2 cups cooked quinoa or rice
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, and fresh dill)

Instructions

  1. In a mixing bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound chicken breasts to an even thickness and marinate in the mixture for at least 30 minutes.
  3. Prepare tzatziki by combining Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and dill in another bowl until smooth.
