  • 1 1/4 cup sugar + 1/2 cup for rolling
  • 1 cup butter
  • 3 egg yolks
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 2 1/2 cup all-purpose flour
  • 1/2 tsp cream of tartar
  • 1/2 tsp salt
  • Green gel food coloring

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a mixing bowl, cream together sugar and butter until light and fluffy.
  3. Add egg yolks one at a time, mixing well after each addition.
  4. Blend in vanilla and salt until combined.
  5. In another bowl, whisk together flour, baking soda, and cream of tartar. Gradually add to the wet mixture until fully combined.
  6. Mix in green gel food coloring until evenly distributed.
  7. Chill dough in the refrigerator for about 20 minutes.
  8. Shape chilled dough into balls (about 1.5 inches in diameter) and roll in sugar.
  9. Place on the prepared cookie sheet without flattening; bake for about 12-13 minutes until edges are set but centers remain soft.
  10. Let cookies cool on the sheet for two minutes before transferring them to a wire rack.
