  • 4 tablespoons low sodium soy sauce
  • 1/2 tablespoon sesame seed oil
  • 1 teaspoon hot sauce
  • 1 tablespoon vegetable oil (divided)
  • 1 red bell pepper (diced)
  • 2 cups diced chicken
  • 3 cloves garlic (minced)
  • 5 cups cold cooked white rice
  • 3 large eggs
  • 1 cup pineapple pieces

Instructions

  1. In a small bowl, mix soy sauce, sesame oil, and hot sauce; set aside.
  2. Heat 1/2 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add diced red bell pepper; cook for 5–7 minutes until tender.
  3. Stir in diced chicken and the white parts of green onions; cook until chicken is browned. Add minced garlic and cook for another minute. Move to a bowl and set aside.
  4. In the same skillet, add remaining vegetable oil and heat until hot. Add cold cooked rice and stir for about 8 minutes to heat through.
  5. Push rice aside, crack eggs on the other side, scramble lightly until just set, then mix into the rice along with the chicken mixture.
  6. Pour sauce over fried rice; stir until combined and heated through. Gently fold in pineapple pieces and green onion tops before serving.
