  • 4 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 cups cooked jasmine rice
  • 1 cup fresh pineapple, diced
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, pineapple juice, ketchup, rice vinegar, garlic, and ginger until smooth.
  2. Place chicken in a resealable bag and pour marinade over it. Seal the bag and refrigerate for at least 2 hours or overnight.
  3. Preheat your grill over medium-high heat. Remove chicken from marinade and discard marinade.
  4. Brush chicken with vegetable oil and grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  5. While grilling, cook jasmine rice according to package instructions if not pre-cooked.
  6. Allow grilled chicken to rest for a few minutes before slicing into strips.
  7. Serve by layering jasmine rice on a plate followed by grilled chicken strips, diced pineapple, red bell pepper, and sliced avocado. Garnish with green onions and fresh cilantro.
