  • 8 ounces uncooked whole-wheat rotini pasta
  • 1 pound broccoli florets
  • 2 tablespoons butter or olive oil
  • 1 small white onion, thinly sliced
  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 1 cup chicken stock
  • 1.5 cups milk
  • 1 teaspoon Dijon mustard
  • 2 cups shredded sharp cheddar cheese
  • 2 cups cooked chicken (diced or shredded)

Instructions

  1. Preheat your oven to 400°F.
  2. Cook the pasta in boiling salted water until al dente; add broccoli in the last minute of cooking. Drain and set aside.
  3. In a sauté pan, heat butter or oil over medium-high heat. Sauté onions for about 3 minutes, then add mushrooms and garlic; cook for another 5 minutes.
  4. Sprinkle flour over the mixture and stir to combine. Gradually add stock and milk while stirring until smooth. Mix in Dijon mustard and seasonings; heat until sauce simmers. Stir in one cup of cheese until melted.
  5. In a baking dish, combine pasta, broccoli, sauce, and chicken; mix well.
  6. Bake uncovered for about 15 minutes. Top with remaining cheese and bake for an additional 10 minutes until golden.
