  • 23 lbs sweet potatoes
  • 1 tablespoon olive oil
  • 1 1/2 lbs lean ground turkey breast
  • 1/2 medium white onion
  • 2 cloves garlic
  • 1 tablespoon tomato paste
  • 1/4 cup vegetable or chicken stock
  • 10 oz frozen mixed veggies (peas and carrots)
  • Kosher salt
  • Ground black pepper
  • Italian seasoning

Instructions

  1. Boil chopped sweet potatoes in salted water until tender (about 15 minutes). Drain, add olive oil, and mash until smooth.
  2. In a skillet over medium heat, brown the turkey. Add onion and garlic; cook until soft. Stir in tomato paste, stock, mixed veggies, salt, pepper, and Italian seasoning; simmer for 5 minutes.
