  • 4 cups dried brown rice fusilli
  • 1 cup frozen peas
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup sliced grape tomatoes
  • 3 (4 oz) cans drained tuna
  • 1/3 cup nonfat plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 tbsp apple vinegar
  • 1 tbsp dijon mustard
  • 2 cloves minced garlic
  • 1 tsp dried dill
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Add frozen peas during the last 4 minutes. Drain and rinse under cold water.
  2. In a large mixing bowl, combine chopped carrots, celery, grape tomatoes, and drained tuna.
  3. In a small bowl, whisk together Greek yogurt, mayonnaise, apple vinegar, dijon mustard, minced garlic, dried dill, salt, and pepper until smooth.
  4. Add the cooled pasta and peas to the vegetable mixture. Pour the dressing over everything and mix well until evenly coated.
