  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • ½ cup low-moisture part-skim mozzarella cheese
  • â…” cup finely grated parmesan cheese
  • 1 can artichoke hearts (16 oz, drained)
  • 6 oz frozen chopped spinach (thawed)
  • 2 garlic cloves (peeled)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp onion powder
  • 1 tsp avocado oil (or olive oil)

Instructions

  1. Preheat oven to 350°F.
  2. Season the cubed chicken with salt and let it sit for about 20 minutes.
  3. Drain artichokes and spinach thoroughly.
  4. Cook chicken in oil over medium heat until mostly cooked through.
  5. Blend cottage cheese with garlic, salt, pepper, and onion powder until smooth.
  6. In a baking dish, combine cooked chicken, spinach, artichokes, blended cottage cheese, and two-thirds of the cheeses. Mix well.
  7. Cover with foil and bake for 20 minutes; then uncover, top with remaining cheeses, and bake for another 10 minutes or broil for a golden finish.
