  • 12 ounces salad greens (spring mix or baby spinach)
  • 1 cup toasted pecan halves
  • 3/4 cup dried cranberries
  • 4 ounces crumbled blue cheese
  • 1/2 cup light vegetable oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup unsweetened apple juice
  • 2 to 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • Freshly ground black pepper (to taste)

Instructions

  1. In a mason jar or bowl, combine vegetable oil, apple cider vinegar, unsweetened apple juice, honey, lemon juice, salt, and black pepper. Shake or whisk until well blended.
