  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ¼ cup granulated sugar (for topping)
  • 1 ½ tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13 inch baking pan with non-stick cooking spray.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time along with vanilla extract, mixing well.
  3. In another bowl, combine flour, salt, baking powder, and cinnamon. Gradually mix this into the wet ingredients until just combined. Pour batter into the prepared pan.
  4. In a small bowl, mix together the remaining sugar with cinnamon and sprinkle over the batter.
  5. Bake for about 25–30 minutes until lightly browned on top; use a toothpick to ensure the center is set.
  6. Allow to cool in the pan for about 30 minutes before cutting into squares.
